Crispy Greek Potatoes

Deliciously crispy on the outside and fluffy on the inside, these roasted Greek potatoes are bursting with flavor from lemon, garlic, and herbs.

  • 46 Potatoes (Russet or Yukon Gold)
  • 1/4 cup Freshly Squeezed Lemon Juice
  • 1/4 cup Extra Virgin Olive Oil
  • 46 Cloves Garlic, Minced
  • 2 tablespoons Dried Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Vegetable or Chicken Broth
  • Fresh Parsley or Oregano (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the potatoes by scrubbing them clean and cutting into 1 to 1.5 inch wedges.
  3. Make the flavor mix by combining lemon juice, olive oil, garlic, oregano, salt, and pepper in a large bowl.
  4. Coat the potato wedges in the lemony mixture.
  5. Roast the potatoes in a single layer on a baking sheet, pouring broth into the bottom.
  6. Roast for about 45-50 minutes, turning halfway through.
  7. Check for doneness when potatoes are golden brown and soft.
  8. Finish with a sprinkle of fresh parsley or oregano and a squeeze of lemon juice before serving.

Notes

Serve as a side to grilled chicken or lamb. Great with tzatziki sauce for dipping.
