Easy Shepherd’s Pie

A comforting classic with a delicious twist, this Easy Shepherd’s Pie is perfect for family dinners.

Ingredients

  • 1 lb ground lamb or beef
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup red wine
  • 1 cup beef broth
  • 4 cups mashed potatoes
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté the chopped onions in olive oil until soft and translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute.
  4. Brown the ground lamb or beef until browned, about 7-10 minutes.
  5. Mix in the mixed vegetables and stir until warmed through.
  6. Create the sauce by stirring in the tomato paste and cooking for another minute before adding the red wine. Simmer for 5-7 minutes.
  7. Add the beef broth and season with salt and pepper, letting it simmer for another 10 minutes.
  8. Prepare the mashed potatoes, reheating leftovers or making fresh with butter and milk.
  9. Assemble the pie by spooning the meat mixture into a baking dish and spreading the mashed potatoes on top.
  10. Bake for 25-30 minutes or until the top is golden brown.
  11. Cool for a few minutes before serving.

Notes

Serve with fresh parsley or chives for garnish and pair with a side salad or crusty bread.
