Garlic Parmesan Chicken and Potatoes

  • 1 ½ lbs boneless (skinless) chicken breasts
  • 1 ½ lbs baby potatoes (halved or quartered if large)
  • 3 tbsp olive oil (divided)
  • 4 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt (more to taste)
  • ½ tsp black pepper
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped, for garnish)
  • 2 tbsp unsalted butter (melted)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper in a large bowl. Toss in the halved baby potatoes and chicken breasts, ensuring they’re well-coated in the mixture.
  3. Transfer the seasoned chicken and potatoes to a baking sheet, spreading them out in a single layer.
  4. Sprinkle the reserved Parmesan cheese over the chicken and potatoes.
  5. Roast in the preheated oven for about 25–30 minutes, or until the chicken is cooked through and the potatoes are golden.
  6. Drizzle the melted butter over the dish about five minutes before it’s done.
  7. Remove from the oven, let it rest, then sprinkle with the reserved Parmesan and chopped parsley before serving.
