Savory Greek Meatball Bowl

A flavorful Greek meatball bowl featuring hearty lamb meatballs, fluffy quinoa, fresh veggies, and creamy tzatziki sauce.

  • 500 g high-quality round lamb
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper (to taste)
  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced kalamata olives
  • 1/2 cup tzatziki sauce
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground lamb and breadcrumbs in a large bowl.
  3. Add the egg, oregano, cumin, garlic powder, chopped red onion, and parsley to the bowl.
  4. Form the mixture into golf ball-sized meatballs.
  5. Place the meatballs on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, or until cooked through and browned.
  7. Rinse the quinoa in cold water.
  8. Combine the rinsed quinoa with 2 cups of water in a medium saucepan, bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes.
  9. Prep your veggies—chop your cucumber and halve the cherry tomatoes.
  10. Assemble your bowls, starting with quinoa, then adding cucumbers and tomatoes, placing several meatballs on top, followed by feta, olives, and tzatziki, finishing with lemon juice.
