  • 3 tbsp honey
  • 12 tbsp hot sauce
  • 1 tbsp unsalted butter
  • 2 cloves garlic (minced)
  • ½ tsp red pepper flakes
  • 2 cups cooked white or brown rice
  • 1 cup sliced cucumber
  • 1 avocado (sliced)
  • ½ cup shredded red cabbage
  • 2 green onions (thinly sliced)
  • Fresh cilantro or parsley (to serve)
  • Sesame seeds (for garnish)
  • Lime wedges (for serving)
  • Drizzle of sriracha mayo
  • Pickled red onions
  • Corn kernels (fresh or roasted)

Instructions

  1. Marinate the Chicken: In a medium bowl, mix garlic powder, smoked paprika, onion powder, salt, and black pepper. Add the chicken thighs and rub the spices all over for an even coating. Let it marinate for at least 15 minutes while you prepare the other ingredients.
  2. Heat the Oil: In a large skillet, heat the olive oil over medium-high heat.
  3. Sear the Chicken: Add the marinated chicken thighs to the skillet and cook for about 5-7 minutes on each side until golden brown.
  4. Create the Hot Honey Sauce: Remove the chicken and add butter and minced garlic to the pan, cooking until fragrant.
  5. Combine Honey and Hot Sauce: Add honey and hot sauce to the pan, stirring until combined.
  6. Glaze the Chicken: Return the chicken to the pan, coating it in the sauce and cooking for an additional 2 minutes.
  7. Prepare Your Rice Base: Ensure your rice is hot and ready to go.
  8. Slice and Prep Your Veggies: Slice the cucumbers, avocado, and green onions.
  9. Assemble the Bowls: Begin with a scoop of rice as your base, topped with glazed chicken and veggies.
  10. Finish It Off: Garnish with cilantro, sesame seeds, lime wedges, and sriracha mayo.

Notes

Feel free to adjust toppings based on your preferences. Add pickled onions and corn for extra flavor.
