Jalapeno Peach Chicken

A sweet and spicy dish that combines the flavors of juicy peaches and fiery jalapenos, perfect for summer barbecues.

  • 4 Boneless, skinless Chicken Breasts
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • 2 Jalapenos, Diced
  • 3 Peaches, Diced
  • 1/4 Cup Honey
  • 1/4 Cup Apple Cider Vinegar
  • 1/4 Cup Water
  • 1 Tablespoon Cornstarch

Instructions

  1. Prep the Chicken: Pat the chicken breasts dry with paper towels and season with salt and pepper.
  2. Heat It Up: In a skillet, heat the olive oil over medium-high heat.
  3. Sear the Chicken: Place the chicken in the skillet and cook for 5–7 minutes on each side until golden brown.
  4. Create the Sauce: Remove chicken from skillet, add jalapenos, and sauté for 2-3 minutes.
  5. Add the Peaches: Stir in peaches and cook for another 2–3 minutes.
  6. Mix the Sauce: Whisk together honey, vinegar, water, and cornstarch, then pour into the skillet, stirring until thickened.
  7. Bring it All Together: Return chicken to the skillet and simmer for 2 minutes.
  8. Plate Up: Serve chicken on a platter and drizzle with sauce, garnishing with fresh herbs.

Notes

For a grilled version, marinate the chicken in the sauce and grill to perfection. Adjust jalapenos based on spice preference.
