  • 4 cups chicken broth
  • 2 chicken breasts, cooked and diced
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup raisins or dried apricots, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil and lemon juice for dressing

Instructions

  1. Cook the Couscous: In a medium saucepan, bring 4 cups of chicken broth to a gentle simmer. Add 2 cups of couscous, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork.
  2. Prepare the Chicken: Season 2 chicken breasts with salt, pepper, and a sprinkle of cumin. Cook in a skillet over medium heat for 6-7 minutes on each side. Remove and let it rest before dicing.
  3. Sauté the Vegetables: In the same skillet, sauté the diced red bell pepper for 3-4 minutes, then add the red onion and cook for another 2-3 minutes until softened.
  4. Combine Ingredients: In a large mixing bowl, combine the fluffed couscous, sautéed bell pepper, diced chicken, chickpeas, cucumber, cherry tomatoes, raisins or dried apricots, and chopped parsley. Sprinkle in seasonings and drizzle with olive oil and lemon juice.
  5. Toss and Serve: Gently toss everything together until well combined. Adjust seasoning to taste, and serve in bowls with additional garnishes if desired.
