Hearty Beef Barley Soup

A rich and nourishing beef barley soup that strikes the perfect balance between homemade goodness and effortless preparation.

  • 1 lb Beef (Chuck Roast or Stew Meat)
  • 1/2 cup Pearl Barley
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 1 Onion, chopped
  • 2 Garlic cloves, minced
  • 6 cups Beef Broth
  • 2 Bay Leaves
  • 1 tsp Thyme (fresh or dried)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the Meat: Cut beef into 1-inch pieces and season with salt and pepper.
  2. Sear the Beef: In a large pot over medium-high heat, add oil and sear beef until browned on the outside.
  3. Sauté the Aromatics: Remove beef, add onions, carrots, and celery, and cook until softened.
  4. Add Garlic and Herbs: Cook garlic for a minute, then add thyme and bay leaves.
  5. Deglaze the Pot: Pour in a cup of beef broth, scraping up the browned bits.
  6. Combine Everything: Return beef to the pot, add remaining broth and barley.
  7. Simmer to Perfection: Bring to a boil, then reduce heat and cover to simmer for 90 minutes.
  8. Final Seasoning: Adjust seasoning before serving and remove bay leaves.

Notes

For a vegetarian option, substitute beef with mushrooms and use vegetable broth.
