Hearty Beef Barley Soup

  • 1 lb Beef (Chuck or Brisket)
  • 1 cup Barley
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 tsp Thyme
  • 1 Bay Leaf
  • 4 cups Beef Broth
  • Salt and Pepper to taste

Instructions

  1. Prep your ingredients by chopping your beef, dicing onion, and slicing carrots and celery.
  2. Sear the beef in a large pot with oil over medium-high heat until browned on all sides.
  3. Sauté the onions, carrots, and celery in the same pot for 5-7 minutes until softened.
  4. Add the garlic and sauté for an additional minute.
  5. Combine the beef back into the pot, add beef broth, barley, thyme, and bay leaf, and bring to a boil.
  6. Reduce heat, cover, and let it simmer for 90-120 minutes.
  7. Check the seasoning and adjust with salt and pepper as needed.
  8. Final touches: Remove the bay leaf and serve hot, garnished with parsley if desired.
