Beef Barley Soup

A rich and hearty Beef Barley Soup filled with tender beef, vibrant vegetables, and plump barley, perfect for comforting chilly evenings.

Ingredients

  • Beef (chuck roast or stew meat)
  • Barley (pearl barley is ideal)
  • Carrots (2-3 medium)
  • Celery (2-3 stalks)
  • Onion (1 medium)
  • Garlic (3-4 cloves)
  • Beef broth (8 cups)
  • Herbs (thyme, bay leaf, salt, and pepper)

Instructions

  1. Prep your ingredients: Dice beef into bite-sized chunks and chop the vegetables.
  2. Sear the beef in a large pot with oil over medium-high heat for 4-5 minutes until browned.
  3. Sauté the onions until translucent, then add garlic and cook for an additional 30 seconds.
  4. Add the carrots and celery, cooking until tender for about 5 minutes.
  5. Combine the seared beef back in the pot, add the broth, thyme, and bay leaf, then bring to a simmer.
  6. Let the soup simmer for 1.5 to 2 hours on low heat.
  7. Stir in barley about 30 minutes before serving, checking for doneness.
  8. Adjust seasoning before serving and remove bay leaf.
