Cabbage Roll Soup

A cozy, hearty soup filled with ground beef, tender cabbage, zesty tomatoes, and rice, perfect for chilly nights.

  • 1 lb Ground Beef
  • 1 medium Cabbage, chopped
  • 1 cup Rice (white or brown)
  • 1 can (14.5 oz) Tomatoes, diced
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Broth (chicken or vegetable)
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Dried Thyme
  • 1 tsp Paprika
  • 1 tbsp Olive Oil

Instructions

  1. Prep your ingredients: Chop the cabbage, and dice the onion and garlic.
  2. Brown the ground beef: In a large pot, heat olive oil over medium heat, add beef, season with salt and pepper, and cook until browned.
  3. Sauté the aromatics: Add onion and garlic, cooking until translucent.
  4. Toss in the cabbage: Add chopped cabbage and cook until it wilts, about 4-5 minutes.
  5. Add the tomatoes and rice: Pour in diced tomatoes (with juice) and stir in the rice.
  6. Simmer away: Add broth and seasonings, bring to a boil, reduce to a simmer and cook for 20-25 minutes.
  7. Final touches: Adjust the thickness and seasoning to your taste.

Notes

Serve with a dollop of sour cream and fresh herbs for added flavor.
