  • 1 medium head Cabbage, chopped
  • 1 cup Rice, uncooked
  • 28 oz can Canned Tomatoes, diced
  • 4 cups Beef Broth
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • 2 teaspoons Paprika
  • 1 teaspoon Dried Oregano

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent. Then, throw in the minced garlic and sauté for an additional minute until fragrant.
  2. Brown the ground beef: Add the ground beef to the pot, breaking it up with your spatula. Season with salt, pepper, and paprika. Cook until browned all the way through.
  3. Incorporate the cabbage: Toss the chopped cabbage into the pot and stir to combine. Cook for a few minutes until it begins to wilt down.
  4. Add the rice and tomatoes: Pour in the canned tomatoes along with their juices and the uncooked rice. Stir everything together until it’s well combined.
  5. Pour in the broth: Add the beef broth to the pot, making sure everything is submerged. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for about 30-35 minutes.
  6. Taste and adjust: After simmering, give your soup a taste. Adjust the seasonings as needed.
  7. Serve: Once everything is cooked and combined, ladle the soup into bowls and serve hot.
