Chicken Noodle Soup

  • 1 lb boneless, skinless chicken breasts or thighs
  • 8 oz egg noodles
  • 2 large carrots, chopped
  • 2 stalks celery, chopped
  • 8 cups chicken broth
  • Salt and pepper to taste
  • Lemon juice to taste
  • Fresh herbs (parsley or dill) for garnish

Instructions

  1. Prep your ingredients: Chop your carrots and celery into bite-sized pieces.
  2. Sauté the veggies: In a large pot, heat oil over medium heat. Add carrots and celery, sauté for about 5 minutes.
  3. Add the chicken, stirring to combine with the veggies.
  4. Pour in the broth and bring to a gentle boil. Reduce heat, cover, and simmer for about 20 minutes.
  5. Cook the noodles according to package instructions in a separate pot. Drain slightly undercooked.
  6. Shred the chicken and return it to the pot, along with the drained noodles.
  7. Taste your soup and adjust seasonings as needed.
  8. Serve it up in bowls, garnished with fresh herbs and a sprinkle of pepper.

Notes

For a twist, add some chopped spinach or kale for extra nutrients. Adjust seasoning to personal preference.
