Heartwarming Chicken Wild Rice Soup

This comforting Chicken Wild Rice Soup is perfect for cozy nights, combining tender chicken, nutty wild rice, and vegetables in a creamy broth.

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 cup uncooked wild rice
  • 23 carrots, diced
  • 23 stalks celery, chopped
  • 1 cup heavy cream
  • 1 onion, chopped
  • 23 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 23 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add a chopped onion and cook for about 3-4 minutes until soft and translucent. Stir in 2-3 minced garlic cloves and continue cooking for another minute until fragrant.
  2. Add the carrots and celery: Toss in your diced carrots and celery. Sauté for about 5 minutes until they’re beginning to soften.
  3. Cook the chicken: Push the veggies aside and add your chicken to the pot. Season with salt and pepper. Cook for about 5 minutes until lightly browned.
  4. Stir in the rice: Add in 1 cup of wild rice, stirring everything to combine.
  5. Pour in the broth: Add 6 cups of chicken broth and 2-3 bay leaves to the pot and bring it to a boil. Reduce heat to low and cover the pot. Let it simmer for 45-60 minutes until the rice is tender and the chicken is cooked through.
  6. Shred the chicken: After simmering, remove the chicken and shred it with two forks. Return the shredded chicken back to the pot.
  7. Blend in the cream: Stir in 1 cup of heavy cream and allow the soup to heat through over low heat for another 5 minutes.

Notes

This soup can be made ahead of time and reheats beautifully. Add more broth when reheating if the rice absorbs too much liquid.
