Broccoli Cheddar Soup

A comforting bowl of creamy broccoli cheddar soup, perfect for chilly days, packed with flavor and warmth.

  • 4 cups Fresh Broccoli, cut into florets
  • 1 cup Carrots, sliced or grated
  • 2 cups Sharp Cheddar Cheese, shredded
  • 1 cup Cream
  • 2 tablespoons Butter
  • 4 cups Vegetable or Chicken Broth
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • A dash of Nutmeg

Instructions

  1. Prep your ingredients by washing and chopping broccoli into small florets, peeling and slicing carrots, and dicing onion. Mincing garlic is next.
  2. Sauté the vegetables: In a large pot, melt butter over medium heat. Add onion and sauté for 4-5 minutes until soft and translucent, then add garlic and carrots and cook for an additional 2-3 minutes.
  3. Cook the broccoli: Add broccoli florets and broth to cover (about 4 cups). Season with salt, pepper, and nutmeg. Bring to boil, then reduce heat and simmer for 15-20 minutes.
  4. Blend the soup to your desired consistency using an immersion blender.
  5. Incorporate the cheese and cream: Return to low heat, stir in cheese and cream until melted and heated through.
  6. Serve and enjoy in bowls, garnished with croutons or extra cheese if desired.

Notes

Pairs well with crusty bread or a simple green salad. Can be stored in the fridge or frozen for later.
