Cheeseburger Soup

A creamy, hearty soup that captures all the flavors of a classic cheeseburger in a comforting bowl.

  • 1 lb Ground Beef
  • 2 medium Potatoes, diced
  • 2 medium Carrots, diced
  • 1 cup Cheddar Cheese, shredded
  • 2 cups Milk
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Beef Broth
  • Salt and Pepper, to taste
  • Olive Oil, for cooking

Instructions

  1. Brown the Beef: In a large pot, heat a splash of olive oil over medium-high heat. Add the ground beef, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes.
  2. Sauté Veggies: Add diced onions and minced garlic to the pot with the beef. Sauté for 3-4 minutes until soft.
  3. Add the Potatoes and Carrots: Stir in diced potatoes and carrots, then season with salt and pepper.
  4. Pour in the Broth and Milk: Add beef broth and milk, bring to a boil, then reduce heat to a simmer for 15-20 minutes until potatoes are tender.
  5. Melt in the Cheese: Lower heat and add shredded cheddar cheese, stirring until melted.
  6. Taste and Adjust: Taste the soup and adjust seasonings if necessary.

Notes

Serve with a sprinkle of extra cheese, green onions, or crispy bacon bits. Enjoy with crusty bread or a light salad.
