Creamy Chicken Gnocchi Soup

A comforting and creamy soup packed with chicken, gnocchi, and vibrant vegetables.

Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 1 pound potato gnocchi
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 4 cups chicken broth
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the vegetables in olive oil over medium heat until softened.
  2. Add chicken pieces and season with salt and pepper. Cook until no longer pink.
  3. Create the broth by pouring in chicken broth and bringing to a simmer for about 10 minutes.
  4. Incorporate the heavy cream, stirring slowly to achieve a rich texture.
  5. Add the gnocchi and cook according to package instructions, typically 2-3 minutes.
  6. Add spinach just before serving, allowing it to wilt slightly.
  7. Taste and adjust seasoning as desired.

Notes

For a lighter soup, substitute cream with half-and-half or coconut milk. This soup can be frozen for up to 3 months.
