Loaded Baked Potato Soup

A comforting loaded baked potato soup full of crispy bacon, creamy cheese, and fresh green onions—it’s a warm hug in a bowl!

  • 4 medium-sized Russet Potatoes
  • 6 slices Bacon
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1 cup Sour Cream
  • 4 stalks Green Onions, chopped
  • 4 cups Chicken Broth

Instructions

  1. Prep your vegetables: Begin by washing and peeling your potatoes. Cut them into small cubes (about 1 inch).
  2. Cook the bacon: In a large pot over medium heat, add the bacon slices. Cook until they are crispy (about 5–7 minutes). Transfer to a paper towel-lined plate and keep about 2 tablespoons of bacon grease in the pot.
  3. Sauté potatoes: Toss the diced potatoes into the pot with the bacon grease. Sauté for about 5 minutes, stirring occasionally.
  4. Add broth: Pour in your chicken broth. Bring to a gentle boil, then reduce heat to low and let simmer for 15–20 minutes, until the potatoes are fork-tender.
  5. Blend it up: Once the potatoes are soft, use an immersion blender for a smooth texture.
  6. Stir in cheese and sour cream: Add shredded cheddar and sour cream, stirring until well combined.
  7. Season and serve: Taste your soup and add salt and pepper as needed. Top with crumbled bacon, extra cheese, and green onions.
