Creamy Potato & Hamburger Soup

A cozy and comforting soup that combines ground beef with creamy potatoes and vibrant vegetables, perfect for chilly days.

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups carrots, sliced
  • Salt and pepper to taste
  • Optional: Chopped parsley for garnish

Instructions

  1. Sauté the beef: In a large pot over medium heat, brown the ground beef until it’s no longer pink, about 5-7 minutes. Season with a pinch of salt and pepper.
  2. Add onions and garlic: Once your beef is browned, toss in the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Introduce the carrots: Stir in sliced carrots and cook for a few more minutes.
  4. Toss in potatoes and broth: Add diced potatoes and pour in the beef broth. Bring to a boil, then reduce heat and simmer for about 15-20 minutes.
  5. Add creaminess: Stir in the milk and heavy cream. Let it cook gently for an additional 5 minutes.
  6. Season to perfection: Taste and adjust the seasoning with more salt, pepper, or hot sauce.
  7. Serve it up: Ladle the soup into bowls and garnish with chopped parsley if desired.

Notes

This soup can be made ahead and tastes even better the next day. Store leftovers in the fridge.
