French Onion Soup

A cozy bowl of classic French Onion Soup, perfect for warming your soul with caramelized onions, rich beef broth, and gooey Gruyère cheese.

  • 34 medium yellow onions, sliced
  • 45 cups beef broth
  • 1 loaf baguette, sliced
  • 12 cups Gruyère cheese, grated
  • 1 tablespoon butter
  • Optional: splash of dry white wine
  • Optional: bay leaf and fresh thyme for flavor

Instructions

  1. Caramelize the onions in a heavy-bottomed pot with butter and salt for 30–40 minutes until golden.
  2. Deglaze the pan with a splash of white wine, scraping up browned bits for flavor.
  3. Add the beef broth, bay leaf, and thyme; simmer for 30 minutes.
  4. Season to taste with salt and pepper, and remove bay leaf.
  5. Prepare the baguette by toasting slices under the broiler.
  6. Assemble the soup in oven-safe bowls with toasted baguette and cheese on top.
  7. Broil until cheese is bubbly and golden, about 3-5 minutes.
  8. Serve immediately, garnished with parsley if desired.

Notes

For a vegetarian version, use vegetable broth and olive oil; you can also experiment with different wines or herbs.
