Garlic Parmesan Crockpot Chicken and Potatoes

A convenient and flavorful dish of tender chicken and baby potatoes cooked in garlic and parmesan, perfect for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep Your Chicken: Rinse the chicken breasts under cold water and pat them dry. Season both sides with salt, pepper, and Italian seasoning.
  2. Sear the Chicken (Optional but Recommended): In a skillet, add olive oil and sear the chicken for about 2-3 minutes on each side until golden brown.
  3. Prep the Potatoes: Cut the baby potatoes in half and place them in the crockpot.
  4. Add Garlic and Broth: Sauté minced garlic in the skillet, then pour in chicken broth and scrape any brown bits.
  5. Combine Everything in the Crockpot: Pour the garlic broth over the potatoes and add the seared chicken on top.
  6. Add the Cheese: Sprinkle grated parmesan over the mixture in the crockpot.
  7. Cook Low and Slow: Cover and cook on low for 6-7 hours or high for 3-4 hours.
  8. Finish Up: Ensure the chicken reaches an internal temperature of 165°F, then shred and mix with the sauce.
  9. Garnish: Top with freshly chopped parsley before serving.

Notes

Serve with a green salad or steamed veggies for a complete meal. This dish can also be baked in the oven at 375°F if you don’t have a slow cooker.
