Italian Wedding Soup

A comforting blend of turkey meatballs, fresh spinach, and hearty pasta swimming in a savory broth.

Ingredients

  • 1 lb ground turkey
  • ¼ cup breadcrumbs
  • 1 egg
  • 2 minced garlic cloves
  • ¼ cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 diced onion
  • 6 cups chicken or vegetable broth
  • 1 cup small pasta (acini di pepe or orzo)
  • 4 cups fresh spinach
  • Fresh parsley for garnish
  • Lemon juice (optional)

Instructions

  1. Combine ground turkey, breadcrumbs, egg, garlic, Parmesan, salt, and pepper in a bowl; shape into meatballs.
  2. Heat olive oil in a pot over medium heat; brown meatballs until cooked through, about 5 minutes.
  3. Add diced onion and garlic to the pot; sauté until softened, about 5 minutes.
  4. Pour in broth and bring to a gentle boil; stir in pasta and cook for about 10 minutes until al dente.
  5. Return meatballs to the pot along with spinach; simmer for another 5 minutes.
  6. Adjust seasoning as needed, and serve in bowls garnished with parsley and Parmesan.

Notes

This soup is customizable; substitute ingredients based on your preference. Serve with crusty bread for a complete meal.
