Ingredients

Scale
  • 1 pound Boneless, skinless chicken breast (or thighs)
  • 1 cup Orzo
  • 2 Fresh lemons (juiced)
  • 4 cups Fresh spinach
  • 3 cloves Fresh garlic (minced)
  • 6 cups Chicken broth
  • 1 Onion (diced)
  • 2 Carrots (chopped)
  • 2 stalks Celery (chopped)
  • 2 tablespoons Olive oil
  • Salt (to taste)
  • Pepper (to taste)
  • Fresh herbs (optional, such as parsley or dill)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  2. Add minced garlic and cook for 1 additional minute.
  3. Cook diced chicken in the pot until golden brown, about 6-7 minutes.
  4. Stir in chicken broth, scraping up any bits from the bottom of the pan.
  5. Bring soup to a boil, then lower heat and add orzo. Simmer for about 10 minutes until orzo is al dente.
  6. Stir in fresh spinach and lemon juice. Adjust seasoning as needed.
  7. Remove from heat and serve hot, garnishing with fresh herbs and lemon zest.

Notes

For a creamier soup, stir in a splash of cream. To make it vegetarian, swap out chicken for chickpeas and use vegetable broth.
