Loaded Taco Potato Soup

A creamy and hearty soup that combines the flavors of tacos with potatoes for a comforting bowl of goodness.

  • 1 lb ground beef
  • 3 cups Yukon Gold potatoes, diced
  • 2 tablespoons taco seasoning
  • 1 cup sharp cheddar cheese, shredded
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef or chicken broth
  • Sour cream and green onions (for topping, optional)

Instructions

  1. Prep your ingredients: Peel and dice your potatoes, mince your garlic, and chop your onion.
  2. Brown the beef: In a large pot, heat olive oil over medium heat and cook the ground beef until browned, about 5-7 minutes.
  3. Add aromatics: Toss in onion and garlic, cooking until the onion is translucent, about 2-3 minutes.
  4. Season it up: Sprinkle in taco seasoning and stir well, cooking for another minute.
  5. In with the potatoes: Pour in broth, add potatoes, bring to a boil, then simmer for 15-20 minutes until tender.
  6. Finishing touches: Stir in cheddar cheese until melted; taste and adjust seasoning if necessary.
  7. Serve it up: Ladle into bowls and top with sour cream and green onions.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for 2-3 months.
