Loaded Taco Potato Soup

A comforting and hearty soup combining the flavors of tacos with the creaminess of potatoes, topped with cheese and fresh garnishes.

  • 1 lb ground beef
  • 4 medium Yukon Gold potatoes, cubed
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 4 cups chicken or vegetable broth
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • 1/4 cup cilantro, chopped (or parsley)

Instructions

  1. Brown the ground beef in a large pot over medium heat, breaking it apart and cooking until browned. Drain excess grease if needed.
  2. Add the cubed potatoes to the pot, stirring until they are coated with the beef juices.
  3. Incorporate the taco seasoning, mixing well to combine and enhancing the flavors.
  4. Pour in the broth, stirring to submerge all ingredients. Bring to a gentle boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Check for doneness and stir in the cheddar cheese until melted and creamy.
  6. Finish with a dollop of sour cream and garnish with green onions and cilantro before serving.
