Slow Cooker Cowboy Casserole

A hearty and flavorful casserole featuring ground beef, tomatoes, and melted cheese, perfect for busy weeknights.

  • 1 pound lean ground beef
  • 1 cup finely diced sweet yellow onions
  • 1 tablespoon minced garlic
  • 1 (16-ounce) can dark red kidney beans, undrained
  • 1 (14.5-ounce) can petite diced tomatoes with juice
  • 1 (10-ounce) can diced tomatoes with fire-roasted hatch chilies, with juice
  • 1 cup frozen corn
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon chipotle powder
  • pounds Yukon Gold potatoes, sliced about inch thick
  • 1¼ cups Colby and Monterey Jack cheese, freshly shredded

Instructions

  1. Brown the beef: Start by putting your skillet over medium heat. Add the lean ground beef and cook until it’s browned, breaking it up with a spatula as it cooks (about 5-7 minutes). Drain any excess grease if needed.
  2. Sauté the veggies: Toss in the finely diced onions and minced garlic. Continue cooking until the onions are soft and translucent, about 2-3 minutes.
  3. Combine ingredients: In your slow cooker, combine the browned beef, sautéed onions and garlic, dark red kidney beans, petite diced tomatoes, fire-roasted hatch chilies, frozen corn, salt, pepper, and chipotle powder. Stir well to ensure everything is evenly mixed.
  4. Layer the potatoes: Layer the sliced Yukon Gold potatoes on top of the meat and vegetable mixture, overlapping them slightly.
  5. Add the cheese: Sprinkle the freshly shredded Colby and Monterey Jack cheese evenly over the top of the potatoes.
  6. Cook slow and low: Cover your slow cooker and set it on low for about 5-6 hours or high for 3-4 hours.
  7. Serve it up: Once done, scoop out servings straight from the slow cooker. Garnish with chopped fresh herbs if desired.

Notes

For a vegetarian version, swap ground beef for lentils or beans. Customize with different toppings or veggies for your taste!
