Hearty and Comforting Stuffed Pepper Soup

A vibrant and satisfying soup that captures the bold flavors of stuffed peppers, perfect for busy weeknights or lazy weekends.

  • 1 pound Ground Beef
  • 1 cup Bell Peppers, diced
  • 1 can (14.5 oz) Canned Tomatoes, diced or crushed
  • 1/2 cup Rice, long-grain white
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 tsp Chili Powder
  • 1 tsp Oregano
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Brown the Beef in a large pot or Dutch oven with a splash of oil over medium heat until nicely browned.
  2. Sauté the chopped onion and minced garlic for about 2-3 minutes, until the onion is translucent.
  3. Add the diced bell peppers and cook for another 3-4 minutes.
  4. Incorporate the canned tomatoes and 4 cups of beef broth, stirring well to combine.
  5. Introduce the rice, cover the pot, and let it cook for around 20 minutes on low heat.
  6. Season to taste and adjust if necessary before serving.
  7. Ready to serve with garnishes if desired.

Notes

For a vegetarian version, substitute ground beef with lentils or beans and use vegetable broth. This soup also freezes well.
