  • 4 Bell Peppers (any color)
  • 1 cup Rice (uncooked)
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 medium Onion, chopped
  • 23 cloves Garlic, minced
  • 3 cups Beef Broth
  • 2 tsp Italian Seasoning
  • Salt and Pepper to Taste

Instructions

  1. Brown the Meat: Start by heating a large pot over medium heat. Add the ground beef, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess grease if necessary.
  2. Sauté the Vegetables: Add the chopped onion and bell peppers to the pot. Sauté for about 5 minutes until softened, then stir in the minced garlic and sauté for another minute.
  3. Add Remaining Ingredients: Pour in the diced tomatoes with their juices, rice, and beef broth. Sprinkle in the Italian seasoning and give everything a good stir. Bring the mixture to a boil.
  4. Simmer: Once boiling, lower the heat to a gentle simmer. Cover the pot and let it cook for about 30 minutes, or until the rice is tender.
  5. Final Touches: If the soup is too thick, add a little extra broth or water to reach your desired consistency. Serve hot with fresh herbs on top.
