Texas Cowboy Stew

A hearty and comforting stew featuring bacon, ground beef, beans, and vegetables, perfect for chilly evenings.

  • 5 slices bacon (chopped)
  • 1 large onion (small dice)
  • 4 large garlic cloves (minced)
  • 1 pound lean ground beef (80/20 or 90/10)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon smoked paprika
  • 34 cups beef broth
  • 1 15-ounce can kidney beans (rinsed and drained)
  • 1 15-ounce can pinto beans (rinsed and drained)
  • 1 15-ounce can sweet yellow corn (drained)
  • 1 4-ounce can green chiles
  • 1 15-ounce can diced tomatoes
  • 3 medium potatoes (peeled and diced)
  • 1 14-ounce package beef kielbasa

Instructions

  1. Cook the bacon in a large pot or Dutch oven over medium heat until crispy, about 5-7 minutes.
  2. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot. Add the diced onions and sauté for 3-4 minutes until translucent. Then add the minced garlic and cook for another minute.
  3. Increase the heat to medium-high and add the ground beef, breaking it apart. Sprinkle with salt, pepper, chili powder, cumin, and smoked paprika. Brown the beef for about 5 minutes.
  4. Pour in 3-4 cups of beef broth, scraping any browned bits off the bottom of the pot.
  5. Add the kidney beans, pinto beans, corn, green chiles, diced tomatoes, and diced potatoes. Bring to a gentle boil.
  6. Reduce the heat to low and let the stew simmer, uncovered, for about 30-40 minutes.
  7. About 10 minutes before serving, toss in the sliced kielbasa and heat through.
  8. Taste and adjust seasonings as needed before serving.

Notes

Serve with toppings like crumbled bacon and chopped green onions, and pair with crusty bread or cornbread.
