Turkey Vegetable Soup

A nourishing bowl of Turkey Vegetable Soup that’s perfect for chilly days, packed with flavors and vibrant ingredients.

Ingredients

  • 2 cups cooked turkey, shredded or ground
  • 2 cups mixed vegetables (carrots, celery, peas, green beans)
  • 6 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping vegetables into small pieces.
  2. Sauté the diced onions in olive oil until translucent.
  3. Add the turkey and cook until warmed through.
  4. Toss in the mixed vegetables and stir for a few minutes.
  5. Pour in the broth, scraping up any bits from the pot.
  6. Season with thyme, rosemary, and pepper.
  7. Simmer for 20-30 minutes, stirring occasionally.
  8. Remove bay leaves and serve, garnishing with herbs or lemon juice.

Notes

Feel free to use leftover turkey, and customize your vegetables based on preference. Add more spices for a flavor boost.
