Turkey Vegetable Soup

A comforting bowl of Turkey Vegetable Soup, perfect for cozy days and using up leftover turkey.

Ingredients

  • 2 cups leftover cooked turkey, shredded
  • 1 cup mixed vegetables (carrots, celery, peas)
  • 6 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1/2 cup onion, diced
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • 1 tablespoon fresh parsley, chopped
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Chop the turkey, dice the veggies, and have those herbs ready.
  2. Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; sauté until softened, about 5–7 minutes.
  3. Add in the broth: Pour in 6 cups of broth and bring to a gentle simmer.
  4. Stir in the turkey and mixed vegetables: Let everything simmer for 15–20 minutes, adjusting seasoning as needed.
  5. Finish with fresh herbs: Right before serving, stir in fresh herbs and a squeeze of lemon juice.

Notes

This soup freezes well; store in an airtight container for up to 3 months.
