Ultimate Turkey Vegetable Soup

A comforting bowl of turkey vegetable soup that’s perfect for chilly nights, packed with rich flavors and vibrant vegetables.

  • 2 cups cooked and shredded turkey
  • 2 cups mixed vegetables (carrots, peas, green beans, corn)
  • 4 cups low-sodium chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped
  • 1 bay leaf
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prepare your ingredients by shredding the turkey and chopping the vegetables.
  2. Heat a splash of olive oil in a large pot over medium heat and add the vegetables; sauté for about 5-7 minutes.
  3. Pour in the broth and bring it to a boil.
  4. Reduce the heat to a gentle simmer, then stir in the shredded turkey and herbs.
  5. Simmer for at least 30 minutes, stirring occasionally.
  6. Taste and adjust the seasoning with salt and pepper as needed.
  7. Serve hot, garnished with fresh parsley and accompanying crusty bread.

Notes

This soup can be made in advance and stored in an airtight container in the fridge for 3-4 days. It freezes well too, just leave out any pasta or grains.
