White Chicken Chili

A creamy and comforting twist on classic chili, packed with flavor and easy to prepare.

  • 1 lb Boneless chicken breasts or thighs
  • 2 cans Cannellini or great northern beans, rinsed and drained
  • 1 can Diced green chiles
  • 1 Yellow onion, diced
  • 1 tsp Ground cumin
  • 4 cups Chicken broth (or vegetable broth)
  • 1 tbsp Olive oil
  • Salt and pepper, to taste
  • Cilantro, for garnish
  • Sour cream and shredded cheese, for serving

Instructions

  1. Prep your ingredients by dicing your onion and shredding your chicken if using rotisserie. Set everything aside.
  2. Sauté the onion in olive oil in a large pot over medium heat until soft and translucent, about 5 minutes.
  3. Add the chicken, seasoning with salt and pepper, and cook until no longer pink, about 6-8 minutes.
  4. Incorporate the cumin and stir for about 30 seconds to toast the spice.
  5. Introduce the broth, beans, and green chiles. Bring to a simmer.
  6. Cook the chili for 20-30 minutes, stirring occasionally. Mash some beans for thickness if desired.
  7. Final touches: Taste and adjust seasoning. Add fresh cilantro if desired.
  8. Serve in bowls and top with garnishes like sour cream, cheese, or cilantro.

Notes

This chili can be customized with spicy jalapeños, heavy cream for richness, or even turned vegan with cauliflower and veggie broth.
