Baked Butternut Squash

A cozy baked butternut squash recipe that brings warmth and comfort to your dinner table.

  • 1 butternut squash
  • 2 tablespoons butter
  • 2 tablespoons olive oil (extra virgin)
  • ½+ teaspoon fine sea salt
  • ½ teaspoon coarse ground black pepper
  • 1 tablespoon maple syrup (or honey)
  • 1 tablespoon balsamic syrup
  • Sprinkle of cinnamon
  • 1 teaspoon Italian seasoning (or herbs de Provence)
  • ½ teaspoon garlic powder (or to taste)

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C).
  2. Prep the squash: Cut the butternut squash in half lengthwise and scoop out the seeds.
  3. Season generously: Brush with melted butter and olive oil, then sprinkle with salt, black pepper, garlic powder, Italian seasoning, and cinnamon.
  4. Sweeten the deal: Drizzle maple syrup and balsamic syrup on top of the squash.
  5. Transfer to a baking sheet: Place the squash halves cut side up on a baking sheet.
  6. Roast away: Roast in the preheated oven for about 40-50 minutes until tender.
  7. Garnish and serve: Sprinkle with cinnamon and fresh herbs, then slice or scoop the flesh out into a bowl.
