Peach Bellini Cupcakes

Delightful and fluffy cupcakes infused with the essence of ripe peaches and a sparkling Prosecco kick, perfect for sunny afternoons and special gatherings.

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup buttermilk
  • 1 cup pureed ripe peaches (fresh or canned)
  • 1/4 cup Prosecco (or any sparkling wine)
  • Peach slices and whipped cream for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Cream the softened butter until it’s light and fluffy, then add the sugar gradually.
  4. Add the eggs one by one, mixing well after each addition.
  5. Next, add the buttermilk and peach puree, mixing until just combined.
  6. Gradually add the dry mixture to the wet mixture, alternating with the Prosecco.
  7. Scoop the batter into your prepared cupcake liners, filling them about 2/3 full.
  8. Bake for approximately 18-20 minutes, or until a toothpick comes out clean.
  9. Cool the cupcakes in the pan for 5 minutes before transferring to a wire rack.
  10. Top each cupcake with whipped cream and garnish with a peach slice.
