Peach Scones

Delicious peach scones that offer a flaky texture combined with vibrant peach flavor, perfect for any time of day.

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup fresh peaches, diced
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the all-purpose flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Add the diced peaches gently into the mixture.
  5. Combine the heavy cream and vanilla extract in a separate bowl, then pour into the dry ingredients and stir until just combined.
  6. Shape the dough into a thick circle, about 1-inch high, on a floured surface.
  7. Cut the dough into wedges.
  8. Egg wash the tops of the scones with a beaten egg.
  9. Bake for 15-20 minutes until golden on top.
  10. Cool on a wire rack before serving.

Notes

Serve warm with whipped cream or clotted cream. Freeze leftovers tightly wrapped.
