Homemade Pumpkin Brownies

  • 1 cup unsweetened cocoa powder
  • 1 cup unsalted butter
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup cream cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium saucepan over low heat, melt your unsalted butter.
  3. Remove the saucepan from the heat and whisk in the cocoa powder and sugar until well combined.
  4. Add the eggs, one at a time, and then stir in the vanilla extract.
  5. Mix in the pumpkin puree and then add the spices: cinnamon, nutmeg, and ginger.
  6. In a separate bowl, whisk together the flour and salt. Gradually fold this mixture into the pumpkin batter.
  7. Spoon dollops of softened cream cheese into the batter and swirl.
  8. Pour the batter into the prepared pan, spreading it evenly.
  9. Pop the brownies into the preheated oven and bake for 25-30 minutes.
  10. Let them cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, consider mixing in chopped nuts or chocolate chips. These brownies can last in an airtight container for up to a week.
