Pumpkin Chicken Soup

A creamy and comforting pumpkin chicken soup perfect for fall gatherings.

  • 1 pound Chicken, boneless, skinless
  • 15 ounces Pumpkin puree
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 cup Cream
  • 1 teaspoon Sage, dried or freshly chopped
  • 4 cups Chicken broth
  • Olive oil, for sautéing
  • Salt and pepper, to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add your diced onion and sauté until it becomes translucent—about 5 minutes.
  2. Add the garlic and cook for another minute, just until fragrant.
  3. Cook the chicken: Add the chicken to the pot, season with salt and pepper, and cook until the chicken is no longer pink, about 6-8 minutes.
  4. Introduce the pumpkin: Stir in the pumpkin puree, mixing it well with the chicken and aromatics.
  5. Pour in the chicken broth and bring to a gentle simmer.
  6. Add cream and sage: After about 10 minutes of simmering, stir in the cream and sage.
  7. Blend (optional): Use an immersion blender to puree some of the soup if desired.
  8. Taste and adjust: Check the seasoning and adjust flavors as needed.

Notes

This soup can be frozen; leave out the cream if you plan on freezing it.
