Comforting Pumpkin Curry Soup

A comforting pumpkin curry soup that balances warmth, creaminess, and a hint of spice, perfect for weeknight dinners or a cozy lunch.

  • 2 cups Pumpkin Puree
  • 1 can Coconut Milk
  • 23 tablespoons Curry Paste
  • 4 cups Vegetable Broth
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 2 tablespoons Lime Juice
  • Salt and Pepper to taste

Instructions

  1. Heat a drizzle of olive oil in a pot over medium heat. Add chopped onions and sauté until soft and translucent, about 4-5 minutes. Toss in minced garlic and ginger, cooking for another minute until fragrant.
  2. Add 2-3 tablespoons of your chosen curry paste. Stir and let it cook for a few minutes to release the flavors.
  3. Stir in pumpkin puree and vegetable broth. Let it simmer on low heat for about 10 minutes.
  4. Pour in coconut milk, stir well, and let it warm through for an additional 5 minutes.
  5. Blend the soup until smooth using an immersion blender, or carefully transfer in batches to a countertop blender.
  6. Season with salt, pepper, and lime juice, adjusting to taste. Serve hot.

Notes

For serving, add a swirl of coconut milk and chopped cilantro. This soup freezes well and can be made in advance.
