  • 2 cups Pumpkin Puree
  • 1/2 cup Fresh Sage (chopped)
  • 4 cups Broth (chicken or vegetable)
  • 1 Onion (diced)
  • 2 cloves Garlic (minced)
  • 1 cup Heavy Cream
  • Salt and Pepper to taste

Instructions

  1. Prep your ingredients: Start by dicing the onion and mincing the garlic. Take your Italian sausage out of its casing if you’re using links, and measure out your pumpkin puree and broth.
  2. Sauté the base: In a large pot, heat a splash of olive oil over medium heat. Toss in the diced onion and cook until translucent, about 3-4 minutes.
  3. Add the sausage: Crumble in the Italian sausage and cook until browned, about 5-7 minutes.
  4. Incorporate garlic and sage: Once the sausage is nicely browned, add the minced garlic and chopped fresh sage. Sauté for an additional 1-2 minutes.
  5. Stir in the pumpkin: Pour in the pumpkin puree and broth. Give everything a good stir to combine.
  6. Simmer away: Let the soup simmer for 15-20 minutes, stirring occasionally.
  7. Cream it up: Just before serving, stir in the heavy cream.
  8. Final touches: Taste one last time and adjust the seasoning if needed.

Notes

Feel free to substitute the sausage with turkey sausage or omitting it entirely for a vegetarian option. Adding a splash of apple cider can enhance the sweetness if desired.
