Creamy Carrot Ginger Soup

A comforting and nourishing carrot ginger soup that warms the belly and soul.

Ingredients

  • 4 large Carrots, peeled and chopped
  • 1 thumb Fresh Ginger, grated
  • 1 cup Cream (or coconut milk for dairy-free)
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep your veggies: Peel and chop your carrots, mince the onion and garlic, and grate the ginger.
  2. Sauté the aromatics: In a pot, heat olive oil and sauté onion until translucent, then add garlic and ginger.
  3. Add the carrots: Stir in chopped carrots and sauté for about 5 minutes.
  4. Pour in the broth: Cover the carrots with vegetable broth, bring to a boil, then simmer for 20-25 minutes.
  5. Blend it up: Use an immersion blender to puree the soup until smooth.
  6. Add the cream: Stir in your cream and season with salt and pepper to taste.
  7. Taste test & adjust: Modify seasoning as desired before serving.

Notes

Serve with fresh herbs and a drizzle of cream for presentation. This soup can also be frozen for up to three months.
