Strawberry Muffins with Cream Cheese Filling

Delightful strawberry muffins filled with a luscious cream cheese center, perfect for breakfast or a sweet snack.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup milk
  • 1 cup fresh strawberries, chopped
  • 8 ounces cream cheese, softened
  • 1/4 cup sugar (for cream cheese filling)
  • 1/2 cup crumbled topping (made of flour, sugar, and butter)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a muffin tin by greasing it or lining it with cupcake liners.
  3. Mix the dry ingredients: flour, sugar, baking powder, and salt in a large bowl.
  4. Combine the wet ingredients: melted butter, egg, and milk in another bowl.
  5. Combine the wet mixture into the dry ingredients and stir gently.
  6. Toss in the fresh strawberries and fold gently.
  7. Prepare the cream cheese filling by mixing it with 1/4 cup of sugar until smooth.
  8. Fill the muffin cups with batter, add cream cheese filling, and cover with more batter.
  9. Make the crumb topping by mixing flour, sugar, and melted butter until crumbly, and sprinkle on top of the muffins.
  10. Bake for 20-25 minutes or until golden brown.
  11. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes

Great for breakfast or as a snack. Serve with a sprinkle of powdered sugar.
