Reuben Soup

A creamy, comforting bowl of Reuben Soup that combines all the iconic flavors of the classic Reuben sandwich into a delightful soup, perfect for any occasion.

  • 1 pound Corned Beef, diced
  • 1 cup Sauerkraut, drained
  • 1 cup Swiss Cheese, shredded
  • 1 cup Heavy Cream
  • 4 cups Beef Broth
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Caraway Seeds
  • Salt and Pepper, to taste

Instructions

  1. Sauté the Aromatics: In a large stockpot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and cook until softened and translucent, about 3-5 minutes. Stir in the garlic and cook for another minute until fragrant.
  2. Add the Broth: Pour in the beef broth, stirring to combine. Bring the mixture to a gentle simmer.
  3. Incorporate the Corned Beef and Sauerkraut: Add in the diced corned beef and drained sauerkraut. Stir well and let it simmer for about 10-15 minutes.
  4. Cream It Up: Stir in the heavy cream and shredded Swiss cheese. Keep the heat low to avoid boiling.
  5. Season to Taste: Add caraway seeds, salt, and pepper. Taste and adjust seasonings as needed.
  6. Simmer and Serve: Let the soup simmer gently for another 5-10 minutes, then ladle into bowls and garnish as desired.

Notes

For a lighter version, substitute half-and-half or milk for the heavy cream, and for a vegetarian option, use vegetable broth instead of beef broth.
