Ultimate Roasted Chicken Salad

A hearty and refreshing roasted chicken salad with crunchy veggies, sweet fruits, and a creamy dressing.

  • Roasted chicken (or rotisserie chicken)
  • 2 cups celery, chopped
  • 1 apple, diced
  • 1 cup grapes, halved
  • 1/2 cup walnuts, toasted
  • 2 tablespoons Dijon mustard
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep your roasted chicken by shredding it into bite-sized pieces.
  2. Chop the celery, apple, and grapes, preparing them for the mix.
  3. Toast the walnuts in a dry skillet over medium heat for 4-5 minutes.
  4. Mix the dressing by combining Dijon mustard, mayonnaise, and lemon juice in a small bowl.
  5. Toss together the chicken, veggies, grapes, and walnuts in a large bowl.
  6. Season with salt and pepper, adjusting to taste.
  7. Let the salad chill in the fridge for about 30 minutes (optional).
