Roasted Red Pepper Soup

A creamy and comforting Roasted Red Pepper Soup that warms the heart and tantalizes the taste buds.

Ingredients

  • 34 medium Roasted Peppers
  • 2 cups Tomatoes, diced
  • 1 cup Cream (or coconut milk for dairy-free)
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 3 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Prep your ingredients by chopping onions and garlic.
  2. Sauté the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Then add the minced garlic and cook for 1 more minute.
  3. Add the roasted peppers and diced tomatoes to the pot, stirring for a couple of minutes.
  4. Pour in the vegetable broth and bring to a gentle simmer. Cook for 15-20 minutes.
  5. Blend the soup until smooth using an immersion blender.
  6. Stir in the cream and adjust seasoning as necessary. If too thick, add more vegetable broth.
  7. Serve in bowls garnished with cream and fresh basil.
