Roasted Spiced Butternut Squash

A simple yet incredible recipe for roasted butternut squash infused with bold spices, perfect for fall.

Ingredients

  • 1 (approximately 3-pound) butternut squash
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel your butternut squash and cut it in half lengthwise, scooping out the seeds.
  3. Chop the flesh into roughly 1-inch cubes.
  4. Toss the cubed squash with olive oil, chili powder, cumin, garlic powder, and a pinch of salt and pepper.
  5. Spread the seasoned squash in a single layer on a baking sheet.
  6. Roast for about 25-30 minutes, or until the squash is golden and tender.
  7. Let the squash cool slightly before serving and garnish as desired.

Notes

Add a tablespoon of maple syrup for a sweet contrast or mix in fresh herbs for extra flavor.
