Santa Claus Macarons

Delightful festive macarons that capture the essence of the holiday season, perfect for creating sweet memories with loved ones.

  • 100 grams Domino® Golden Sugar
  • 4 grams egg white powder (optional)
  • 100 grams egg whites
  • 105 grams almond flour
  • 105 grams Domino® Powdered Sugar
  • 1 1/2 cups (187 grams) Domino® Powdered Sugar
  • 1 tbsp meringue powder
  • 4 tbsp water
  • 2 drops black gel food coloring
  • 1 drop yellow gel food coloring
  • 1/2 cup (63 grams) all-purpose flour
  • 1/2 cup (113 grams) unsalted butter
  • 1/4 cup (50 grams) Domino® Golden Sugar
  • 1 1/4 cup (156 grams) Domino® Powdered Sugar
  • 1 tsp vanilla extract
  • 1/8 tsp almond extract
  • 1/2 tbsp milk or heavy cream
  • 1/4 cup (50 grams) desiccated coconut (shredded)

Instructions

  1. Preheat your oven: Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper or a silicone mat.
  2. Mix the egg whites: If using egg white powder, dissolve it with the water in a small bowl, then set aside.
  3. Whip the egg whites: In a clean bowl, beat egg whites until soft peaks form. Gradually add the Domino® Golden Sugar, whisking until stiff peaks form.
  4. Sift the dry ingredients: In a separate bowl, sift together almond flour and Domino® Powdered Sugar.
  5. Fold in the dry mix: Gently fold the sifted dry ingredients into the whipped egg whites until combined.
  6. Color your mixture: Divide batter into two bowls and add gel food colorings as desired.
  7. Pipe the macaron shells: Transfer batter to a piping bag and pipe onto prepared baking sheets.
  8. Let them rest: Allow macarons to rest at room temperature for 30-60 minutes.
  9. Bake: Bake for 15-20 minutes or until they have a slight sheen and lift off easily.
  10. Cool the macarons: Let them cool completely on the pan.
  11. Prepare the filling: Beat softened unsalted butter until fluffy, then mix in the remaining ingredients until smooth.
  12. Assemble the macarons: Pair up shells, pipe filling onto one shell, and press matching shell on top.
  13. Store and enjoy: Place assembled macarons in an airtight container and let rest in the fridge for at least 24 hours.

Notes

Macarons are best enjoyed after resting in the fridge for 24 hours to enhance their flavor.
