Fluffy Pumpkin French Toast

A cozy breakfast recipe that combines traditional French toast with rich pumpkin flavor, perfect for fall mornings.

  • 4 slices of bread (thick-cut brioche or challah recommended)
  • 1/2 cup milk (whole or dairy-free alternatives)
  • 2 eggs (large)
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • Butter for cooking
  • Whipped cream or whipped pumpkin butter for topping

Instructions

  1. Whisk together the milk, eggs, pumpkin puree, pumpkin pie spice, sugar, and vanilla extract in a mixing bowl until smooth.
  2. Heat a skillet or griddle over medium heat and add butter to coat the bottom.
  3. Soak each slice of bread briefly in the pumpkin mixture and place in the skillet.
  4. Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 3 minutes.
  5. Remove the cooked French toast to a plate. Keep warm in the oven if needed while finishing the batch.
  6. Serve hot topped with maple syrup, whipped cream, or whipped pumpkin butter, and garnish with extra pumpkin pie spice if desired.

Notes

For variety, try adding nuts, chocolate chips, or spices to the batter. Leftover batter can be used for pancakes or waffles.
