Keto Cream Cheese Cookies

Deliciously satisfying keto-friendly cookies that are soft, chewy, and easy to make.

  • 3/4 cup blanched almond flour
  • 1.5 tablespoons coconut flour
  • 1/2 cup granulated sweetener
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 4 ounces full-fat cream cheese
  • 1 large egg
  • 1.5 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking sheet by lining it with parchment paper or a silicone baking mat.
  3. Mix the dry ingredients: almond flour, coconut flour, baking powder, and salt in a bowl.
  4. Cream the cream cheese and granulated sweetener together until smooth.
  5. Add the egg and vanilla extract to the mixture and beat until combined.
  6. Combine the dry and wet mixtures, folding until just blended.
  7. Scoop tablespoon-sized portions onto the prepared baking sheet.
  8. Bake for 10-12 minutes or until edges are golden brown.
  9. Let the cookies cool on the baking sheet for a couple of minutes before transferring to a wire rack.
