Shrimp Scampi Garlic Cream Pasta

  • Juice from one lemon (approximately 2 tablespoons)
  • 1/4 teaspoon crushed red chili flakes (optional)
  • 4 tablespoons unsalted butter (separated into two portions)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 1 pound large shrimp (shells removed and deveined)
  • 1 teaspoon finely grated lemon zest
  • 12 ounces dried spaghetti or linguine noodles
  • 1/2 cup dry white wine or low-sodium chicken broth
  • 3 tablespoons extra virgin olive oil
  • 5 cloves fresh garlic (finely minced)
  • 1/4 cup Italian flat-leaf parsley (chopped)
  • 1/2 cup finely grated Parmesan cheese
  • Kosher salt (to taste)

Instructions

  1. Prepare the Pasta: Boil salted water in a large pot. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve about a cup of pasta water just before draining.
  2. Sauté the Garlic: While your pasta is cooking, heat the olive oil in a large skillet over medium heat. Toss in the minced garlic and sauté for about 30 seconds until fragrant.
  3. Cook the Shrimp: Add the shrimp to the skillet, sprinkle with salt, black pepper, and red chili flakes. Cook for about 2-3 minutes on each side until they turn pink and opaque.
  4. Add the Liquid Gold: Once the shrimp are cooked, pour in the dry white wine (or chicken broth) and the juice from your zested lemon. Let it simmer for a couple of minutes until the liquid reduces slightly.
  5. Finish the Sauce: Stir in the butter and let it melt into the sauce, followed by the lemon zest and chopped parsley.
  6. Combine with Pasta: Add the drained pasta directly into the skillet with the sauce, tossing to combine everything. Sprinkle in the shredded mozzarella and Parmesan cheese.

Notes

For a lighter version, replace butter with olive oil. Customize by adding spinach or using lime juice instead of lemon.
